What We Made: Popcorn Balls & Enchiladas




This past weekend I wanted to make a cozy, holiday sweet but honestly didn't feel like standing at the stove for hours making caramels or even baking. I had a little cold and wanted to make something quick and easy.


When I was a kid, I loved popcorn balls. We usually bought them in the fall, but I dreamed about them all year long.


After searching for a bit, I found an easy version for making them in the microwave but opted to make it on the stove just in case in bubbled over (who wants to clean caramel out of a microwave? not me).


If you like your popcorn balls really sticky and covered in the caramel, make less popcorn. I found it easiest to make the caramel in a pot on low on the stove and simmer for a few minutes before turning it off.


I drizzled it over the popcorn on a wax-lined sheet and then to use up the caramel in a pot, poured the popcorn back into the pot and stirred it around.


My kids really liked these and I didn't use too much caramel so it's not a sugar-overload type of situation.



We also had beef and cheese enchiladas, photo below.



If you're looking for an easy dinner, it only requires enchilada sauce (which you can make or buy), cheese, corn tortillas, and meat.


Most online enchilada recipes call for flour tortillas, but I find they're really soggy. Use corn ones. To roll them with less breaking, heat them on a skillet until just warm.


Here's a really simple recipe you can make on a weekend or weeknight.
